Summertime Key Lime Tarts
16 ounces softened cream cheese, not fat-free variety 14 ounce can sweetened condensed milk ½ cup fresh Key Lime juice (see note) 1 cup heavy whipping cream 2 tablespoons sugar Green food color, optional 12 mini individual graham cracker crusts Topping½ cup heavy whipping cream 1 tablespoon sugarIn large bowl, beat cream cheese on medium speed until light and fluffy. Add sweetened condensed milk and beat 30 seconds until smooth. Scrape bowl well. Stir in lime juice and set aside.In medium bowl, combine 1 cup heavy whipping cream and 2 tablespoons sugar. Whip until thick and peaks form. Quickly fold whipped cream into cream cheese mixture with sweeping motions. Scrape bowl well. If desired, tint with only small drop of green food color.Spoon into mini graham shells. Chill 1 hour before serving.For the topping: In medium bowl, combine ¨ cup heavy whipping cream and 1 tablespoon sugar. Beat on medium speed until peaks form. Spoon or pipe into tarts.Serves 12.Baker?s hint: Look for Key limes in 1-pound mesh bags at grocery stores and produce markets.
