Ziti with Cranberries and Italian Soy Sausage
1 pound ziti pasta 2 tablespoons olive oil Pinch crushed red pepper flakes 14 ounces (4 large links) Italian soy sausage, cut into ?-inch rounds ½ cup kalamata olives, pitted and coarsely chopped 1 cup fresh cranberries SaltBring a large stockpot of lightly salted water to a boil over a high flame. Add the pasta and cook until tender, about 8 minutes. Drain, rinse under cool water and set aside.While the pasta cooks, combine the oil and red pepper flakes in a large skillet over a medium-high flame. Cook for 1 minute. Add the soy sausage and olives and cook 5 minutes. Add the cranberries and cook another 3 minutes, or until the pasta is heated through.Add the pasta to the skillet and toss with cranberry and sausage mixture. Cook for 30 seconds, or until evenly heated. Salt to taste. Serve immediately.Serves six.J.M. Hirsh
