Mushroom Gravy
2 tablespoons unsalted butter ¨ medium yellow onion, diced (about 1/2 cup) ¨ pound white button mushrooms, rinsed, patted dry and thinly sliced 2 tablespoons all-purpose flour 1 teaspoon coarse salt ¨ teaspoon freshly ground black pepper 2 cups veal stock or chicken stockMelt the butter in a medium saucepan over medium heat. Add the onion and saute for 2 minutes, or until soft. Add the mushrooms and saute until golden brown, about 5 minutes. Add the flour and cook 1 to 2 minutes, stirring con-stantly.Add the stock and allow to come to a boil. Add the salt and pep-per, and continue to boil until thickened, 5-10 minutes.
