Lemon Dijon Vinaigrette
1 large clove garlic, minced
2 teaspoons Dijon mustard
Juice of half lemon
2-3 squirts Worcestershire sauce
1/8 teaspoon salt
2-3 grinds fresh pepper
1/4 teaspoon oregano
1/2 cup extra virgin olive oil
1 tablespoon water
Whisk garlic, Dijon mustard, lemon, Worcestershire, salt, pepper and oregano in medium bowl. Slowly drizzle olive oil into mixture, whisking continuously to form an emulsion. Add water and whisk until smooth. Set dressing aside for at least 2 hours before serving so flavors can blend.
Makes about 1 cup.
