Garlic-Herb Pork Chops

Garlic-Herb Pork Chops
4 center cut pork chops, 1 1/2 inches thick
5 cloves garlic, peeled and chopped
1/2 teaspoon salt
2 tablespoons dried rosemary
1 teaspoon dried oregano
1 teaspoon dried thyme,
3-4 grinds fresh pepper
3 tablespoons olive oil
Wash chops and dry with paper towel. Set aside.
Mash the garlic and salt together with the back of a chopping knife to form a garlic paste.
In small bowl mix dried herbs and pepper together.
Rub garlic paste evenly over both sides of the chops. Rub the herb mixture over that. Place chops in plastic bag, seal and refrigerate at least 2 hours.
When ready to cook, preheat oven to 400 degrees. Heat olive oil in large, oven-proof saute pan. Brown the chops over medium to medium-high heat for 3 minutes on each side. Place in oven and cook for 20 minutes. Check for doneness and cook longer if desired.
Serves four.
