Pork Tenderloin Roll-ups
4 pounds pork tenderloin
3 green bell peppers
4 large plum tomatoes
2 large Bermuda onions
1 pound bacon
10 slices Cheddar cheese
Preheat oven to 450 degrees.
Cut pork tenderloin into 10 pieces.
Slice tomatoes and onions. Quarter the bell peppers and remove seeds.
Arrange two slices of bacon in X shapes. Place pork tenderloin on top of X's, then layer on 1 slice onion, 1 or 2 pieces bell pepper and 3 slices tomato. Fold bacon over and stick a toothpick in the top to hold together. Place in baking pan and cook for 45 minutes.
Place slice of cheese on top of each hot roll-up and serve.
Serves 10.
