Pecan Encrusted Flounder
1 medium flounder fillet
3/4 cup finely crushed roasted pecans
2 tablespoons melted margarine
2 tablespoons unseasoned bread crumbs
Salt
Pepper
Paprika
Garlic
Rinse and lightly season fillet with salt, pepper, paprika and garlic, to taste. Roll fillet in melted margarine. Combine pecans and bread crumbs, press fillet into mixture, covering both sides. Brown in a dry iron skillet on low heat.
