Spicy Nutmeg Chicken

Spicy Nutmeg Chicken
Syrup
1/4 cup sugar
1/4 cup water
2 tablespoons dark rum
2 teaspoons ground nutmeg
Chicken
8 chicken legs (or combination of legs and thighs)
Salt, to taste
Freshly ground pepper, to taste
2 cloves garlic, peeled and minced
1/4 cup grated onion
1/2 teaspoon pepper sauce, such as Pick-a-Peppa sauce or hot sauce
1/4 cup soy sauce
1 batch of nutmeg syrup (recipe follows)
1/4 teaspoon ground ginger
Make the syrup: Bring the sugar and water to boil in small saucepan. Cook and stir until sugar dissolves. Stir in rum and nutmeg. Allow to cool before using.
Make the chicken: Preheat the oven to 400 degrees. Put the chicken in a single layer in a baking pan and sprinkle all over with salt, pepper, garlic and onions. Bake for 15 minutes.
Meanwhile, combine the pepper sauce, soy sauce, nutmeg syrup and ginger in a small bowl. Remove chicken from oven and baste with this mixture. Lower the oven temperature to 300 degrees and return the chicken to the oven. Bake for an hour more, basting frequently. Serve hot.
