Quaker Oats Oatmeal Cookies with Extra Goodies and No Eggs

¾ cup butter, soft

¾ cup firmly packed brown sugar

½ cup granulated sugar

1 tablespoon Bob's Red Mill Vegetarian Egg Replacer mixed with 3 tablespoons water

¼ cup water

1 teaspoon vanilla

1 cup sifted all-purpose flour

1 teaspoon salt

½ teaspoon baking soda

3 cups oats, uncooked

Beat butter, sugars, egg replacer, water and vanilla together until creamy. Stir together flour, salt and soda; add to creamed mixture, blend well. Stir in oats. (I add 1 cup each chopped nuts, raisins or dried cranberries, chocolate chips and coconut) Drop by teaspoonfuls onto greased baking sheets. Preheat oven to 350 degrees and bake for 12 to 15 minutes.

Makes 6 dozen.
