Tiramisu

3 cups heavy whipping cream

2 cups powdered sugar

16 ounces mascarpone cheese

1 teaspoon vanilla extract

¼ cup light rum, divided

1 cup black coffee

3 packages (7 ounces each) ladyfingers

Shaved chocolate for garnish

Spray the ring of a 9-inch springform pan with nonstick spray and place on a 9-inch or larger serving platter.

In a large bowl, whip the cold cream until soft peaks form. Add the powdered sugar, vanilla, 1 teaspoon rum and mascarpone cheese and whip until stiff peaks form.

Pour the remainder of the rum into a cup of black coffee that has been cooled slightly.

Place one package worth of ladyfingers along the sides of the pan and on the bottom; brush the ladyfingers with the coffee mixture. Place one-third of whipped cream mixture over the ladyfingers and carefully smooth it around for the first layer of tiramisu. Add another layer of ladyfingers on top of the cream mixture; brush it with coffee mixture.

Spread another third of the cream on top and smooth. Add another layer of ladyfingers; brush with coffee mixture. Spread the rest of the cream mixture over the ladyfingers to finish the layers. Sprinkle the top with shaved chocolate and refrigerate overnight.

Unmold the pan and wrap a ribbon around it (optional) to make it look beautiful.
