15-Minute Black Bean Soup

2 teaspoons olive oil #189; cup chopped red onion 1 teaspoon finely chopped garlic #190; teaspoon dried oregano #190; teaspoon ground cumin 1 can (15 ounces) black beans, rinsed and drained 2 cups organic chicken broth 1 tablespoon feta cheese #188; cup chopped cilantroHeat the oil in a large saucepan over medium heat. Cook the onion, garlic, oregano, and cumin for 3 minutes or until the onion is soft. Add the beans and broth, reduce the heat to medium-low and cook, stirring occasionally for 10 minutes. Mash some beans against the side of the pan to thicken the soup.
