15-Minute Black Bean Soup
2 teaspoons olive oil
cup chopped red onion
1 teaspoon finely chopped garlic
teaspoon dried oregano
teaspoon ground cumin
1 can (15 ounces) black beans, rinsed and drained
2 cups organic chicken broth
1 tablespoon feta cheese
cup chopped cilantro
Heat the oil in a large saucepan over medium heat. Cook the onion, garlic, oregano, and cumin for 3 minutes or until the onion is soft.
Add the beans and broth, reduce the heat to medium-low and cook, stirring occasionally for 10 minutes.
Mash some beans against the side of the pan to thicken the soup. Sprinkle with feta and cilantro, then serve.
