Fried Green Tomatoes
1 green tomato2 eggsFlour for dustingAbout 1 cup Italian bread crumbsExtra virgin olive oil 1/4 cup parmesan cheese1 cup mozzarella cheese 1/3 cup tomato sauceChopped parsley for garnishSlice tomato horizontally into four 1/4-inch slices.Lightly dust each slice with flour. Dip in beaten eggs and coat with bread crumbs. Saute in hot olive oil until golden brown. Remove from oil and allow to drain on a paper towel.Top each slice evenly with cheeses and place 5 to 6 inches beneath a hot broiler and allow cheese to melt until bubbling and turning golden brown.Remove from broiler and slide tomatoes from pan onto a heated bed of your favorite red sauce.
