Those Yummy Stuffed Pork Chops

3 tablespoons gluten-free bread crumbs

1 rib celery, thinly sliced

1 onion, chopped

1 egg white, beaten slightly

1 teaspoon fresh thyme, chopped, or your favorite fresh herb

6 boneless loin pork chops, at least 1 inch thick

Heat oven to 400 degrees.

Lightly coat a baking pan with nonstick spray.

Combine bread crumbs, celery, onion, egg white, thyme and pepper in a bowl. Slice pretty deeply into the side of each pork chop to create a pocket. Fill each pocket with as much stuffing as will fit. Secure with toothpick.

Heat a large skillet over medium and coat with nonstick spray.

Brown chops on both sides, about 3 to 4 minutes. Transfer to prepared baking pan. Cover with foil and bake about 15 minutes or until meat is not pink and vegetables are tender. Uncover and continue baking until stuffing is golden and crispy, about 10 more minutes.

Serves six.
