Cream Cheese Chocolate Midgets

1 1/2 cups flour1 cup sugar 1/4 cocoa powder1 tablespoon white vinegar1 teaspoon vanilla extract1 teaspoon baking soda 1/2 teaspoon salt1 cup water 1/3 cup cooking oilFilling6 ounces cream cheese, softened1 egg 1/3 cup sugar 1/8 teaspoon salt6 ounces chocolate chipsHeat oven to 350 degrees. Line several mini-muffin tins with paper liners.In a large bowl, combine flour, sugar, cocoa powder, vinegar, vanilla, baking soda, salt, water and oil. Stir until well-combined. Place 1 tablespoon batter in each muffin cup.For the filling: In a medium bowl, combine cream cheese, egg, sugar and salt; fold in chocolate chips. Put 1 teaspoon filling in each mini cup on top of batter. Bake 20 minutes. Cool in pan for 15 minutes, remove, and cool in freezer for several hours or in refrigerator overnight.Makes three to four dozen.Nutrition values per cookie: 80 calories, 3 g fat (2 g saturated), 13 g carbohydrates, 1 g fiber, 1 g protein, 10 mg cholesterol, 75 mg sodium.Pamela Carlson, Arlington Heights
