¼ ounce Cynar (Italian bitter liqueur) 1 ounce gin 2 pinches of salt 2 ounces tomato juice #189; ounce fresh lemon juice 2 grinds of fresh black pepper 5 dashes garlic pepper sauce (such as Tabasco) #189; teaspoon of Dijon mustard #189; ounce Chianti Large basil leaf Roasted garlic clove In a pint glass, mix Cynar and gin, spirits together (except wine) and dissolve the first pinch of salt in liquid. Stir in tomato juice, lemon juice, 1 twist of pepper, garlic pepper sauce and mustard. Add to mixing glass and fill with ice. Mix back and forth between two glasses; strain into fresh ice in tall glass. Garnish with pepper, salt, basil leaf, garlic clove and float red wine on top. Fred Sarkis, Sable Restaurant Bar, Chicago
