Diane's Breakfast Cookies
½
cup butter or margarine, softened
6 tablespoons brown sugar
6 tablespoons granulated sugar
1 egg
1 cup all-purpose flour
¼
teaspoon baking soda
10 strips maple-flavored bacon, cooked and crumbled
2 cups cornflakes
½
cup raisins or other dried fruit
Heat oven to 350 degrees.
In a mixing bowl, cream the butter and sugar until light. Beat in the egg.
In a another bowl, whisk together the flour and baking soda. Gradually add flour to the creamed mixture, blending thoroughly. Stir in bacon, cornflakes and raisins.
Drop by rounded tablespoons 2 inches apart on ungreased baking sheets. Bake 12-15 minutes, until golden brown. Cool. Store in refrigerator.
Serves 20 to 24.
