The Money Maker

3 parts mint-infused tequila, see note

½ part quality raspberry liqueur

¼ part Branca Menta

1½ parts fresh lemon juice

½ part simple syrup

1 egg white

Combine all ingredients in a mixing glass. Dry shake, without ice, to combine. Add ice, shake well and strain into an Old-Fashioned glass over fresh ice. Garnish with a mint sprig.

Serves one.

Bar note: For the infusion, combine 4 ounces rinsed mint with 500 ml premium tequila; cover and set at room temperature 1 hour. Strain before using.
