Stoplight Pepper and Egg Filling
1/4 cup olive oil1 small onion2 green peppers, sliced2 red peppers, sliced2 yellow peppers, slicedSalt and pepper to taste6 eggs1 tablespoon grated parmesan or Romano1/4 cup milkIn large skillet heat olive and saute onions on low until transparent. Add peppers, season with salt and pepper and continue cooking, stirring frequently, until peppers are tender.In a bowl whisk together eggs, cheese and milk. Raise heat under skillet to medium and add egg mixture, stirring well. Cook eggs through. Fill and bake calzone as directed in dough instructions.Makes enough to fill eight calzones.
