Waffle Browns
2 cups frozen shredded hash browns
2 eggs
1 tablespoon milk
Salt and pepper to taste
Optional add-in
Chopped onion and green peppers
Cooked, crumbled bacon or breakfast sausage
Chopped jalepeno and tomato
Leftover steak, diced
Toppings
Sour cream or salsa
Chopped cilantro
Combine hash browns, eggs and milk in a bowl. Season with salt and pepper. Stir in any combination of add-ins you wish.
Heat waffle iron and coat with nonstick spray. Spoon mixture into waffle iron and close lid. Cook until golden brown.
Top with additional cheese, sour cream or salsa. Be creative — add anything you would put in an omelet.
