Cinnamon Apple Cake
4 tablespoons butter, softened1 3/4 cups sugar, divided1 teaspoon vanilla extract6 ounces cream cheese, softened2 large eggs1 1/2 cups flour1 1/2 teaspoons baking powder 1/4 teaspoon salt2 teaspoon cinnamon3 cups Rome apples, peeled and choppedHeat oven to 350 degrees. Butter an 8-inch springform pan.In a mixer at medium speed beat butter, 1 1/2 cups sugar, vanilla and cream cheese until well blended. Add eggs one at a time, beating well after each addition.In a small bowl whisk together, flour, baking powder and salt. Add to the butter mixture and beat at low speed until blended.Combine cinnamon and remaining 1/4 cup of sugar in small dish.In another bowl place the apples and 2 tablespoons of the cinnamon-sugar mixture; stir well. Add apples to the batter. Pour into buttered, 8-inch springform pan. Sprinkle on remaining cinnamon-sugar. Bake 1 hour and 15 minutes or until cake starts to pull slightly away from sides of pan.
