Succotash
6 slices bacon, choppedOlive oil1 onion, chopped 1/2 red pepper seeded and chopped2 cups frozen corn1 cup frozen lima beans1 cup low-sodium chicken brothSalt and pepper to tastePinch of sugarChopped fresh basil leaves.In a large sauté pan, cook bacon until crisp; remove and set aside.Add thin layer of olive oil to pan if needed and sauté onion and pepper until tender. Add corn, lima beans, chicken broth, salt, pepper and sugar. Cook for 10 minutes or until heated through. Stir in the bacon and basil.Serves four to six.Nutrition values per serving: 223 calories, 14 g fat (5 g saturated), 20 g carbohydrates, 4 g fiber, 6 g protein, 16 mg cholesterol, 334 mg sodium.
