Cadillac Chips
2 sticks (1 cup) unsalted butter, softened1 cup light brown sugar, packed1 cup dark brown sugar, packed1 tablespoon vanilla extract2 large eggs2 1/2 cups bleached flour2 teaspoons salt1 teaspoon baking powder2 tablespoons ground coriander4 cups coarsely chopped pecans2 cups semi-sweet chocolate chips1 cup butterscotch chipsHeat oven to 375 degrees. Grease several cookie sheets.With an electric mixer, cream butter with light and dark brown sugars until light and fluffy. Blend in vanilla. Add eggs, one at a time, beating until well incorporated.Mix flour, salt, baking powder and ground coriander until well mixed; add to butter mixture.With a spoon, stir in nuts, chocolate chips and butterscotch chips. With a 1/4 cup measuring cup, scoop cookie dough onto cookie sheets. Chill dough on cookie sheet in refrigerator for 10 minutes.Bake in middle of oven for 12 to 15 minutes or until golden.Serves 36.Cook's note: This batter fills a 4 1/2 quart mixing bowl.
