Jan's Pizza Crust
2 cups warm water2 packets dry yeast1 tablespoon honey4 1/2 cups flour1 teaspoon salt 1/2 cup cornmeal 1/3 cup olive oilCorn meal for dusting pansOlive oil for sprinkling over crustIn mixer pour 2 cups warm water, add yeast and honey. Let sit 5-10 minutes.Add 2 cups of the flour and the salt; mix. Add cornmeal, mix. Pour in olive oil, stir. Place dough hook on mixer if desired, add remainder of flour and beat until dough is soft and not sticky. Let rise for about four hours, punching down after two hours.Makes enough for one 14-inch deep dish pizza and two 16-inch thin crust pizzas.For pesto pizza crust: Omit olive oil and add 1/2 cup homemade or store-bought basil pesto.
