Just Spinach

2 pounds spinach leaves, stemmed, washed and spun dryFine sea saltFreshly grated nutmegPlace the spinach in a skillet, adding a few tablespoons of water to the pan. Cover and cook over high heat until the spinach is completely wilted, 3 to 4 minutes. Drain well in a colander. Serve with a slotted spoon; draining off any remaining liquid. Season with salt and nutmeg.
