Salmon Rillettes
8 ounces smoked salmon, finely chopped
¼ cup sour cream or Greek yogurt
2 tablespoons minced shallot
2 tablespoons finely chopped fresh chives, tarragon or dill or a mix
2 tablespoons well-drained capers, chopped
1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
black pepper to taste
In a bowl combine all the ingredients and stir gently until just combined. Chill until ready to serve.
