Ugly but Great-Tasting, Oven-Roasted Green Beans

1 1/4 pounds fresh green beans1 tablespoon good-quality olive oilKosher saltFresh ground black pepper2 teaspoons minced garlic (2-3 cloves)Place oven rack in middle position and heat oven to 450 degrees. Line a jelly roll pan with heavy-duty foil. Set aside.Rinse green beans under cold water, pat dry with paper towels; trim ends.Add olive oil to large mixing bowl and swirl bowl to thin out. Add green beans, salt and pepper and toss until well-coated. Distribute green beans on prepared pan and roast 10 minutes.While beans roast, add garlic to the same work bowl and set aside.Remove beans from oven, add to garlic and toss until garlic is evenly distributed. Return beans to pan and roast 12 minutes more or until they begin to brown in spots and shrivel. Taste and adjust seasoning.
