Apple Oatmeal Crumble
4 cups, peeled, cored and thinly sliced apples (from about 3 apples), such as Gala or Jonagold)
1 tablespoon fresh-squeezed lemon juice
¼ cup granulated sugar
1 cup quick-cooking oats
½ cup dark brown sugar
⅓ cup all-purpose unbleached flour
¼ teaspoon ground cinnamon
Pinch salt
2 tablespoons unsalted margarine (no trans fat), melted
Set the oven rack in the middle position and heat oven to 375 degrees. Lightly spray the bottom and sides of a medium baking dish with vegetable oil.
In a medium mixing bowl stir together apples, lemon juice and sugar. Spread apples evenly into prepared pan; set aside.
In a medium mixing bowl combine oats, brown sugar, flour, cinnamon and salt, stirring to combine. Sprinkle the oat mixture over the apples; drizzle melted margarine over the top.
Bake for 30 minutes, or until apples are tender but not mushy. Allow to cool slightly. Serve warm.
