Biz's twice baked potatoes and sauteed carrots

For the twice baked potatoes:

1 potato per two people

Avocado oil spray

Bacon bits

1 tablespoon shredded cheddar cheese

Microwave one potato per two people. Let cool slightly. Cut each potato in half lengthwise. Scoop out flesh leaving about ΒΌ inch of potato in the skin.

Spray with avocado oil spray and air fry for 8 minutes at 400 degrees. Add 1 tablespoon real bacon bits and a tablespoon of shredded cheddar cheese in the potato skin and cook an additional minute or until the cheese is melted.

For the carrots:

2 medium size carrots per person

1 tablespoon of butter

Salt and pepper to taste

In a small saute pan add two inches of water. Peel and slice carrots in half. Boil in the water for 5 minutes, or until fork tender. Drain the water. Add the carrots back to the pan and add a tablespoon of butter, salt and pepper.
