Beets with Greens

1 bunch beets with tops

2 tablespoons olive oil

1 onion

1 T. dried rosemary

1 T. lemon juice

Cut beet greens and stems from beets. Wash beets and boil till tender. Let cool slightly then peel, slice thinly. Thinly slice onion. Stack beet greens, roll cigar style and slice thinly.

Wash beet stems and greens well. Cut stems into 1 inch pieces.

Heat saute pan to medium high. Add olive oil and sliced onion and beet stems for 3 minutes until slightly tender. Add beet greens and sauté until bright green about 2 minutes.

Add sliced beets to greens. Add rosemary and lemon juice. Toss to blend flavors. Serve hot, cold or room temp.
