Brian's Pie Dough

1¼ cups all-purpose flour

1 teaspoon salt

1 stick (8 tablespoons) unsalted cold butter, cut into pieces

3 tablespoons ice water, plus more if needed

In the bowl of a food processor, combine flour, salt and butter. Pulse until mixture resembles coarse meal. Slowly add 3 tablespoons ice water and pulse until dough just holds together when pressed between your fingers. If dough is too dry, add more water, 1 teaspoon at a time, until desired consistency is reached. Remove dough from bowl, form into a disk, and wrap in plastic. Chill dough for about 30 minutes before using.

Makes crust for one quiche or pie.
