Italian Sausage and Peppers
24 sweet or hot Italian sausage links
3 yellow bell peppers
3 red bell peppers
6 medium onions
1 can (18 ounces) tomato paste
French rolls for serving
Heat oven to 325 degrees.
Put the sausages into a large roasting pan.
Cut peppers into pieces about 2-by-2-inches; add to roasting pan. Roughly chop onions; add to pan. Spoon the tomato paste over meat and vegetables and cover the pan tightly with aluminum foil. Bake 1 hour or until the peppers are very soft. The concoction will make its own moisture so stir occasionally to distribute the paste and juices.
Serve on Italian rolls or hoagie buns.
