Greek Jell-O

2 small (3 ounces) or 1 large box lime gelatin

2 cups boiling water

2 containers (6 ounces each) honey- or vanilla-flavored Greek yogurt

In a large bowl, mix boiling water and powdered gelatin; stir 2 minutes until completely dissolved. Whisk in yogurt until completely blended. Pour mixture into loaf pan and chill 4 hours or until firm.

Using a melon baller or an ice cream scoop spoon out gelatin into dessert glasses. Garnish with drizzle of honey, walnuts, lime wedge, mint sprig and puff pastry cookie, if desired.

Serves six to eight.
