Thai Spring Rolls
3 large rice wrappers
3 cups chopped vegetables (like carrots, broccoli, cucumbers)
Steamed shrimp, cooked chicken, or cooked pork to taste
½ cup hoisin sauce
Pinch salt
¼ cup sugar
1 cup fresh pineapple, diced
Soak rice wrappers in water to soften; pat dry and place on a plate.
Working with one wrapper at a time, place 1 cup vegetables and protein of choice in the bottom third of the wrapper; fold the bottom portion over the filling and then fold in the side and roll up like a burrito.
For the dipping sauce: Mix hoisin, salt, sugar and pineapple in a saucepan. Stir over low heat until blended. Serve as dipping sauce.
Serves three.
