Chocolate Banana Eggrolls

1 banana

4 eggroll wrappers

4 tablespoons chocolate chips

Oil for frying

Cut banana in half lengthwise and then into 2-inch pieces.

Put a couple of pieces of banana and 1 tablespoon chocolate chips in the center of an eggroll wrapper. With your finger, dab water around the edges then fold sides in and roll up like a burrito.

Fill a pot with a couple inches of oil and heat to nearly smoking. Fry egg rolls until golden brown. Sprinkle with confectioners sugar. Serve immediately with or without ice cream.

Serves four.
