Banana Nut Bread
8 ounces cream cheese, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup mashed ripe bananas (2-3 bananas)
½ cup chopped walnuts
2 cups baking mix (such as Bisquick)
Streusel topping
¼ cup all-purpose flour
2 tablespoon sugar
¼ teaspoon ground cinnamon
2 tablespoon butter
Heat oven to 350 degrees. Grease a 9-inch loaf pan or 2 smaller foil loaf pans with cooking spray. Set aside.In a large bowl, with an electric mixer, cream together the softened cream cheese and sugar. Add eggs, vanilla and mashed banana; mix until well combined. Stir in the chopped nuts.Add the baking mix and stir just until moistened. Do not over mix. Spoon batter into prepared pan(s).For the streusel topping: Combine flour, sugar, and cinnamon in a small bowl.Cut the butter into the dry mixture using a pastry blender or 2 forks until it resembles coarse crumbs. Sprinkle over top of batter.Bake 45 minutes or until golden brown. Cool on a wire rack for 10 minutes. Remove from pan and serve warm.Serves 12.Cook#146;s note: I use this topping on muffins and other quick breads.
