Cheesy Spinach

2 bags (10 ounces each) fresh spinach

½ cup water

1 teaspoon minced garlic

2 teaspoons butter

1 teaspoon bacon grease, optional

¼ cup flour

16 ounces Velveeta cheese, cut into smaller chunks

¾ cup half and half

Salt and pepper to taste

Bring a large pot of water to a boil. Add spinach and cook until tender, about 15 minutes. Drain and put into paper towels to absorb the water. Set aside. In a large skillet over medium heat, heat butter and bacon grease. Add flour and stir until smooth. Then add the cheese and half and half and stir until smooth Season to taste. Add spinach and stir to coat. Heat through.Serves four to six.
