Baked Halibut

2 halibut fillets (6 ounces each)

1 egg white

½ cup bread crumbs

½ cup fresh lemon juice

2 tablespoons butter, melted

Heat oven to 350 degrees.Put the egg white in a shallow dish and whip it with a fork until frothy. Put the bread crumbs in a separate shallow dish.Dip fillets in the egg white and then into the bread crumbs to throughly coat. Place breaded fillets into a shallow baking dish.Pour lemon juice around the fillets, enough to cover the bottom of the dish. Bake, uncovered, 35 minutes or until fish is flaky. Drizzle with melted butter.Serves two.
