Healthy Whole Wheat Flax ’n’ Apple Muffins

¾ cup white flour

¾ cup wheat flour

¼ cup milled flaxseed

½ cup sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 egg beaten

1½ cups finely chopped apple.

3 tablespoons oil

½ cup milk

½ cup chopped nuts

Heat oven to 400 degrees. Grease a standard 12-cup muffin tin or line with paper liners.In a large bowl stir flours, flaxseed, sugar, baking powder, baking soda and salt until will combined.In another large bowl, combine egg, oil and milk. Add dry ingredients to egg mixture; stir until blended. Fold in apple and nuts. Batter will be thick.Scoop batter into cups, about two-thirds full. Bake 18-20 minutes, or until top springs back when touched.Serves 12.
