Baked German Apple Pancake
½ cup flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon salt
cup milk
2 eggs
1 teaspoon vanilla extract
2 tablespoons butter
1¼ pounds apples (about 3 medium), cored and sliced thin
¼ cup brown sugar
¼ teaspoon cinnamon
Powdered sugar for dusting
Heat oven to 350 degrees.In medium bowl, whisk flour, sugar, baking powder and salt.In small bowl, whisk milk, eggs and vanilla. Pour into dry ingredients and whisk until well combined.Over medium-high, heat a 10-inch ovenproof, nonstick saute pan. Add butter. Once melted, add apples, brown sugar and cinnamon; saute until apples are soft. Remove from heat.Slowly pour pancake mixture over apples around the outside first then into the center. Transfer pan into heated oven and bake about 15 minutes or until a toothpick inserted into the center comes out clean.Place a large plate over the hot pan and quickly flip pan onto plate. Dust with powdered sugar and serve.Serves four.
