Salmon with Roasted Apple Garlic Sauce

½ teaspoon olive oil

2 Granny Smith apples, peeled and chopped

4 cloves garlic

2 cups chicken stock

1 cup red wine, preferably pinot noir

Olive oil for sauteing

-frac12; cup flour

1frac12; pounds salmon fillets

Heat oven to 400 degrees.

Grease baking sheet with olive oil and scatter apples and garlic on top. Roast 20-30 minutes, turning occasionally, until soft. With a fork or potato masher, mash them together.

Increase oven temp to 450 degrees.

In a separate pan, heat stock and wine to boiling. Add apple-garlic mash and cook until sauce thickens. Strain, if desired.

Heat a large, ovenproof saute pan with a little olive oil. Dredge fillets in flour; sear on #8220;presentation,#8221; or non-skinned side, about 3 to 4 minutes or until it develops a nice, golden crust. Flip fillet and place pan in oven 4 to 5 minutes. Serve drizzled with sauce.

Serves four.

Cook's note: To grill salmon instead, brush fillets with olive oil, season with salt and pepper. Grill 3 to 4 minutes per side, or until fish flakes but is not dry.
