Apple Side-dish Stuffing
4-5 firm, medium sweet apples, such as red or golden delicious
14 slices whole wheat bread, crust trimmed, cubed
1 cup cottage cheese
3 tablespoons brown sugar (adjust for sweetness of apples)
1 cup milk
Extra brown sugar for garnish
Heat oven to 425 degrees. Butter an 8-by-8-inch baking dish.
Wash, peel, core and dice the apples. Toss the apples, bread cubes, cottage cheese and brown sugar. Stir in the milk and scoop into prepared pan. Sprinkle the top with brown sugar.
Bake 30-35 minutes. Stuffing should be golden brown and bubbling hot. Serve hot.
Serves four to six.
