Juicy Peanut Butter-Marinated Pork Tenderloin

2 pork tenderloins, 3/4 pounds each#188; cup smooth peanut butter#188; cup apricot preserves3 tablespoons peanut oil, plus more for sauteing3 tablespoons apple cider vinegar1 medium yellow onion, peeled and quartered1 clove garlic1 tablespoon grated fresh ginger#189; tablespoon black pepper, freshly groundFor the marinade: Combine the peanut butter, apricot preserves, peanut oil, vinegar, onion, garlic, ginger, and pepper in a food processor and pulse until well combined. Transfer to a plastic bag or nonreactive pan.Immerse the pork in the marinade and cover. Refrigerate 4-6 hours. Heat the oven to 375 degrees. Remove most of the marinade from the meat and reserve.Sear the pork in peanut or olive oil in a hot skillet for about 5 minutes on each side, or until brown. Transfer the tenderloins to a baking dish and pour the reserved marinade over the meat. Cook covered for 8 minutes, then continue cooking uncovered until a meat thermometer inserted in the thickest part of the meat reads 150 degrees.
