Crunchy Honey-Mustard Tilapia

4 tilapia fillets (4-5 ounces each)

2 tablespoons honey

1 tablespoon Dijon mustard

2 teaspoons soy sauce

2 teaspoons grated orange rind

cup lightly crushed cornflakes

½

teaspoon white pepper

2 tablespoons melted butter

1 teaspoon chopped fresh parsley

Heat oven to 350 degrees. Lightly oil an 8-by-8-inch glass baking dish.

In a small bowl, whisk together honey, mustard, soy sauce and grated orange rind. Using a pastry brush, slather both sides of the tilapia fillets with the mixture.

Mix cornflakes and white pepper in a pie plate. Press each fillet in the crumbs, coating well on both sides. Place the fish in prepared pan and drizzle each fillet with melted butter. Bake 18-20 minutes, just until fish can be flaked.

Remove from oven and sprinkle with fresh parsley.

Serves four.
