Pretzel Pork Chops
4 boneless pork chops, 1½-2 inches thick
Salt and pepper
½ cup all-purpose flour
2 large eggs, beaten
1 cup crushed pretzels
3 tablespoons olive oil
Heat oven to 400 degrees.
Seasons chops with salt and pepper. Dredge in flour, dip in eggs and coat in pretzel crumbs.
In hot oil, brown chops, about 2 minutes each side and transfer to baking sheet lined with parchment paper. Bake 30-45 minutes.
Serves four.
