Fresh Strawberry Orange Dessert Topping

2 pounds fresh strawberries, cleaned and sliced

3 tablespoons sugar, see note

Juice of 1 medium orange

Orange slices, for garnish

Place one-third of the berry slices (preferably the ripest ones) in a medium bowl. Put remaining berry slices in a larger bowl and set aside.

Sprinkle sugar over the berries in the medium bowl; cut orange in half and squeeze juice over the berries. Transfer to a blender and puree until completely smooth. Pour sauce over reserved sliced berries. Stir well to combine.

Cover tightly and refrigerate for 1 hour before serving. Serve over your favorite cake or biscuit and top with whipped cream. Cut remaining orange into thin slices. Garnish plate for aroma and color.

Serves eight.

Baker's hint: Fresh strawberries vary in natural sweetness. Taste the sauce and adjust sugar minimally, if necessary. Sauce keeps well for three days.
