Turkey Loaf Florentine

2½ pounds ground turkey breast, lean

5 ounces fresh spinach, chopped

1 cup rolled oats

½ cup shredded carrots

½ cup finely chopped shallots

½ cup egg substitute

⅓ cup skim milk

Hollandaise Sauce

Heat oven to 350 degrees.

In a large bowl, gently mix turkey, spinach, oats, carrots, shallots, egg substitute and milk just until well-blended. Scoop into 9-inch loaf pan and smooth surface evenly. Bake about 1 hour or until meat thermometer placed in center reaches 170 degrees and no pink remains. Let stand for 5-10 minutes before slicing.

To serve: Spoon Hollandaise sauce over individual slices or pass sauce.

Serves five.
