Mango Salsa

4 ripe mangoes, peeled and diced (3 to 4 cups)

¾ cup yellow bell pepper, diced

¾ cup red bell pepper, diced

2 tablespoons jalapeno pepper, minced

2 tablespoons fresh lime juice

¼ cup orange juice

1 cup cilantro, chopped

Salt and pepper to taste

Combine all ingredients in a bowl.

Serves 10 to 12.

Cook's note: Leftover salsa may be served with other dishes, such as sauteed pork tenderloin.
