Golden Crusted Panini
Mayonnaise to taste
1 pound loaf sourdough bread, cut in 16 slices
1 pound smoked ham, thinly sliced
1 bunch arugula, de-stemmed
½ pound Fontina cheese, cut in 8 slices
½ pound Asiago cheese, cut in 8 slices
Dijon mustard to taste
2 cloves garlic, peeled and sliced
¼ cup olive oil
Arrange 8 slices of bread on baking sheet; spread mayonnaise on each to taste. Layer on ham, arugula and cheeses, dividing evenly.
Spread mustard on remaining 8 slices of bread and place on top of each sandwich.
Place garlic in small bowl and pour olive oil over. Microwave 1 minute; remove garlic. Brush oil on top of sandwiches. Place sandwiches oil-side-down on flat grill heated to 350 degrees or in large sauté pan over low to medium heat. Place baking sheet or large plate on top of sandwiches and weigh it down with a pan full of water or other heavy, heat-proof object. Cook about 5 minutes or until sandwich is crusty and golden.
Flip sandwiches over, brush with remaining oil and cook 5 minutes, weighted down, or until golden brown. (Some of cheese will melt onto cooking surface.)
Serves eight.
