Orange Pecan Cookies

1 cup margarine or butter or both 1/2 cup brown sugar 1/2 cup granulated sugar1 egg, beaten1 1/2 tablespoons grated orange zest2 3/4 cups flour 1/4 teaspoon baking soda 1/4 teaspoon salt2 tablespoons orange juice 1/2 cup chopped pecansCream shortening and sugar; add beaten eggs and beat well. Add grated orange zest.In separate bowl mix flour, soda and salt. Add to mixture and combine well. Fold in nuts.Form dough into three or four cylinders about 1 1/2 inches in diameter. Wrap in waxed paper and chill 2 hours or overnight.Heat oven to 350 degrees.Slice dough about 1/4-inch thick, place on ungreased cookie sheets and bake about 10 minutes or until just slightly brown around the edges.Makes 6 to 7 dozen.Cook's note: You can freeze the dough and slice and bake as desired.Nutrition values per serving: 54 calories, 3 g fat (1.5 g saturated), 6 g carbohydrates, trace amount fiber, 1 g protein, 9 mg cholesterol, 13 mg sodium.
