Blueberry Buckle
1/2 cup margarine 1/2 cup sugar1 egg, well beaten2 cups flour2 1/2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup milk2 cups blueberriesTopping 1/2 cup sugar 1/2 cup sifted flour 1/2 teaspoon cinnamon 1/4 cup butterHeat oven to 350 degrees. Grease and flour a 7-by-11-inch pan.With an electric mixer, cream margarine and sugar until well-combined. Add egg and mix well.In a medium bowl, sift together flour, baking powder and salt. Add to creamed mixture alternately with milk. Spread batter into prepared pan; sprinkle blueberries over.For the topping: Combine sugar, flour and cinnamon in a medium bowl. With pastry cutter or two knives cut in the butter until the mixture resembles coarse crumbs. Sprinkle over blueberries and bake 45-50 minutes, or until toothpick inserted comes out clean. Top will be slightly brown.Serves 12.Cook's note: Very good with vanilla ice cream as dessert, or plain for breakfast.
